My son has recently been diagnosed with a milk allergy. It has come as a welcomed surprise as over the last two years we have been wracking our brains trying to work out what his triggers are for his eczema flare-up’s. Since eliminating all dairy from his diet, we have seen a remarkable improvement. So my mission has been to find lots of interesting dairy-free recipes to keep my little one enthused and excited about food. This is a recipe for 3 flavours of dairy-free ice-creams using frozen bananas, kindly sent in to us via Facebook. We hope you enjoy making this as much as I have!
Cut 3 ripe bananas into chunks and place into a freezer. Once completely solid, tip the chunks of banana into a food processor, with 1 tbsp. of vanilla extract. Mix until gooey and creamy and then place into a tub or dish to refreeze. It’s as easy as that!
Try Strawberry/Banana Cream using a cup of frozen strawberries and 2 frozen bananas, or Chocolate/Banana Cream with 3 tsp. of cocoa powder and 1 tbsp. of coconut oil mixed with the bananas!
This is a 3-ingredient recipe that takes 5 minutes to make and the children (and adults) will love it!
