- 1 cucumber
- 1/2 jar of sun dried tomatoes with garlic
- 1 medium Beetroot (spiralised)
- fresh spinach leaves
- Balsamic vinegar and soy sauce to taste (2 tbsp of each)
- 3 tbsp of olive oil
Wash leaves thoroughly and then spiralise beetroot or grate.Finally slice cucumber and drain sun dried toms and add to leaves. Mix up balsamic vinegar and soy and olive oil. Pour over leaves or keep separate.
